Chocolate Swirl Banana Loaf

This nutritious loaf is made with the wholesomeness of sorghum, millet and oat flours, bananas and applesauce. It is sweetened with brown sugar and a delicious swirl of chocolate.

MAKES 1 LOAF (SERVES 8)

⅓ cup (75 mL) oat flour

⅓ cup (75 mL) millet flour

⅓ cup (75 mL) sorghum flour

1 tsp (5 mL) baking soda

¼ tsp (1 mL) salt

1 large egg

2 large egg whites

1 cup (250 mL) mashed ripe banana

⅓ cup (75 mL) lightly packed brown sugar

⅓ cup (75 mL) unsweetened applesauce

¼ tsp (1 mL) grapeseed or organic light-tasting oil

½ cup (125 mL) semisweet chocolate chips

Lightly grease or spray with cooking oil a 9- × 5-inch (2 L) loaf pan. Line the pan with parchment paper. Preheat the oven to 350°F (180°C).

Place the oat, millet and sorghum flours, baking soda and salt in a medium bowl and whisk to combine. Set aside.

In a separate medium bowl, whisk together the egg, egg whites, banana, brown sugar, applesauce and oil. Gently stir the egg mixture into the flour mixture until just mixed. Pour half of the batter into the prepared loaf pan and set the remainder aside for a moment.

Melt the chocolate chips in a double boiler over low heat until just melted. Pour the melted chocolate on top of the batter in the loaf pan. Top with the remaining batter and run a knife through the mixture to swirl the chocolate. Repeat a few times until the desired swirl is achieved.

Bake for 40 to 45 minutes, until a toothpick inserted in the center comes out clean. Let the loaf cool slightly in the pan before moving it to a wire rack. Slice while still warm or wait until it has cooled completely.
